Beating cocoa with a rotary egg beater prevents scum from forming over the top

SPICED TEA

16 cups water
1 tsp. allspice
Juice 2 lemons
Mrs. J. I. Brooks

6 tea bags
1 tsp. whole cloves
Juice 2 oranges
Place tea and spices in bag in boiling water and simmer 5 minutes. Add juice, cover lightly. Serve hot.
SUMMER PUNCH

2 cups boiling water
2 tsp. tea
1 cup Jack Frost Extra-Fine Powdered sugar
1 qt. Ginger Ale.

2 cups grape juice
Juice of 3 or 4 lemons
2¼ cups pineapple juice (No.2 can)

Pour boiling water over tea. Cover and steep for 3 min. Stain. Combine tea infusion, powdered sugar and fruit juices. Regular sugar can be used in place of powdered sugar, if desired. Chill. Add ginger ale just before serving. Serve with cracked ice or ice cubes. Garnish with slices of lime and sprigs of mint if desired. Makes 10 large glasses.

POT O' GOLD PUNCH Mrs. Ralph Johenning

3 cups pineapple juice, 2 cups orange juice, 3 cups ginger ale, and 1 orange.

Chill fruit juices and ginger ale. Combine just before serving. Serve in punch bowl with cracked ice. Slice orange thin; cut in fancy shapes; float on punch. Serves 12.

The Springer Connection thanks Vicky Wright Covington, HSHS Class of '74, for providing the Recipe book for this feature.

The book, "Favorite Highland Springs Recipes" was written and published in 1953 by the Highland Springs Women's Club as a fund raiser.

The book has a foreword about the history of HIghland Springs, along with Recipes from some of the leading citizens of the town. The book is produced in typewriter text (recreated here) and has hand-drawn illustrations and advertisements for the local merchants that helped pay for its publication.

We have tried to faithfully recreate the imagery and feel of the book as it was printed 50 years ago. The recipes, page numbers and illustrations are presented as they were in the original book.
