M E A T, P O U L T R Y, S E A F O O D
SCALLOPED CHICKEN - Mrs. W.D.R. Proffitt
4 cups cooked chicken
1 cup chopped celery
2 tbsp. minced parsley
2 tbsp. grated onions
1 cup soft bread crumbs
4 slightly beaten eggs
2 cups chicken stock
Salt and pepper to taste
Use chicken breast and bake slowly in covered pan until tender. Then cut in bite size pieces, place in greased casserole alternate layers of celery, crumbs, parsley, onion and chicken. Add eggs to seasoned chicken stock, mix thoroughly and pour over contents of casserole. Bake in pan of warm water in 350° oven for forty-five minutes to an hour. Serves 6 or 8.
PIG IN A POKE

4 cups cooked wide noodles
1 can tomato soup or tomatoes
2 tbsp. grated onion
6 pork chops
Salt and pepper to taste
Place the cooked noodle in a casserole. Dilute tomato soup with water and pour over the noodles or used canned tomatoes. Season with salt and pepper. Add grated onion. Place pork chops over noodles and bake in a moderate oven for 1½ hours. After the chops have browned on one side turn so they will be evenly browned on both sides.

The Springer Connection thanks Vicky Wright Covington, HSHS Class of '74, for providing the Recipe book for this feature.

The book, "Favorite Highland Springs Recipes" was written and published in 1953 by the Highland Springs Women's Club as a fund raiser.

The book has a foreword about the history of HIghland Springs, along with Recipes from some of the leading citizens of the town. The book is produced in typewriter text (recreated here) and has hand-drawn illustrations and advertisements for the local merchants that helped pay for its publication.

We have tried to faithfully recreate the imagery and feel of the book as it was printed 50 years ago. The recipes, page numbers and illustrations are presented as they were in the original book.
